JASON BARRATT
Executive Chef, Jason Barratt grew up on the south-east coast of Victoria, beginning his career at the Stokehouse in St Kilda and has held senior roles at Circa The Prince and the 3 Hatted Attica. Jason also owned cult sandwich shop, Hector’s Deli, in Richmond. Most recently, Jason was Head Chef at Raes on Wategos before taking the helm as Executive Chef at award-wining hatted Paper Daisy. Jason is passionate about flavour and dedicated to using quality local produce and sustainably sourced seafood.
Husk Distillers

Nestled in the green caldera surrounding Mt Warning in Northern NSW, the Husk Farm Distillery is the birthplace of Australian Agricole Rum and the home of Ink Gin.
As the only paddock to bottle rum distillery in Australia, they grow 100% of the sugar cane used to make their rum right on their farm.

The Prancing Horse Supercar Drive Day Experience (Cabarita Beach, New South Wales) is available in August 2020 to drivers who are 25+ years old and possess a complete and valid driver licence. Comprehensive vehicle insurance is included on the provision that a maximum 'at-fault' insurance-excess of A$10k applies to the driver and a security deposit or bond is not required. Guests may reduce their excess to A$5k via an upgrade of A$220 (covers both drivers), however it cannot be reduced entirely. Prancing Horse reserves the right to amend or revise details without notice, with events subject to availability. Prancing Horse guarantee the inclusion of a brand new Ferrari 488 GTB and Lamborghini Huracán LP 610-4. The complete stable of supercars will always remain a surprise on the day. The beachy jet-set fantasy conjured by the boutique likes of Halcyon House often comes undone at the table. But Paper Daisy doubles down on the magic, perfectly in tune with the blend of poolside ease and inspiration that makes this hotel such an intoxicating treat. Seafood is a must at any time of the day: cured moonfish “ham” between crisps of house-made rye bread is a stand-out among a salvo of dazzling snacks, while a special tames the smoky richness of grilled mackerel with a smooth chickpea purée and a mixture of pickled and fresh cucumbers. Tropical fruit and herbs perfume the menu, not least in a sapote sorbet with toasted buckwheat and jackfruit. Wine and service are en pointe. Make the detour, savour the reward.
